10 phyllo dough sheets
1lb spinach
1lb blite (herb)
1lb white beet
1 leek
12oz feta cheese, mashed with a fork
1 onion, finely chopped
4 spring onions, finely chopped
Half cup parsley, finely chopped
Half cup dill, finely chopped
4 eggs, beaten
Half cup olive oil

Cooking Time: 
about 1 hour
Cooking Directions: 

- Wash and finely chop the vegetables.
- Rub them with salt and squeeze they soften and the excess moisture drains off.
- Place in a bowl and add the onions, dill and parsley.
- Stir well and add the mashed feta cheese, beaten eggs, pepper and oil.
- Stir the mixture very well
- Place half filo pastry sheets in a greased baking dish, brushing each one separately with oil.
- Spread the mixture over the pastry and turn the edges inwards.
- Cover with the remainder of the pastry sheets, once again brushing each one with oil.
- Mark out portions with a knife, bake at 350oF for about one hour and serve hot.
